
Ingredients:
- 3 – 12oz cans refried beans
- 1 – 12 oz can of red enchilada sauce
- 3 small cans of sliced black olives
- 3 small cans of diced green chiles
- 2 cups cilantro – chopped
- 2 cups green onion – sliced
- 8 oz of shredded mexican cheese blend
- 3 roma tomatoes – diced
- 2 avocados – sliced
- 1 large jalapeño – sliced
- lemon juice – to taste
- coarse black pepper – to taste
Directions:
- In a large casserole dish combine the refried beans and enchilada sauce. Distribute mixture evenly in the bottom of the dish with a spatula.
- Add the black olives, green chiles, green onion, and tomatos on top of the layer of beans.
- Add an even layer of the shredded cheese.
- Add the avocado slices on top of the cheese.
- Sprinkle cilantro, lemon juice, and black pepper evenly over top of the avocado.
- Top with jalapeño slices.
- Chill and serve with tortilla chips.
