Ingredients:
- 2 French demi baguettes
- 1 small ball of mozzarella cheese sliced thick
- 1 cucumber sliced (peel sides if desired)
- 1 roma tomato sliced
- About 10-16 fresh basil leaves
- Mayonnaise or Vegenaise
- Salt & pepper (optional)
Directions:
- Cut the demi baguettes in half and evenly spread the mayo/Vegenaise on each half.
- On one half of the baguettes layer the tomato slices, then the basil, then the cheese, then the cucumber slices.
- Add salt & pepper if desired and top with other half of the baguettes to complete the sandwiches.
