Super Easy Summer Sammie


  • 2 French demi baguettes
  • 1 small ball of mozzarella cheese sliced thick
  • 1 cucumber sliced (peel sides if desired)
  • 1 roma tomato sliced
  • About 10-16 fresh basil leaves
  • Mayonnaise or Vegenaise
  • Salt & pepper (optional)


  1. Cut the demi baguettes in half and evenly spread the mayo/Vegenaise on each half.
  2. On one half of the baguettes layer the tomato slices, then the basil, then the cheese, then the cucumber slices.
  3. Add salt & pepper if desired and top with other half of the baguettes to complete the sandwiches.
