Black Bean Soup

Ingredients:

  • 1 large brown onion diced
  • 1 jalapeño pepper diced (optional)
  • 1 12oz can black beans
  • 1 12 oz can diced tomatoes
  • 2 cups water
  • 1 vegetarian chicken flavored bullion
  • Chili pepper
  • Olive oil

Directions

  1. In a large pot cook the onions in the olive oil until they turn translucent.
  2. Add the diced tomatoes, black beans, and jalapeño.
  3. Add the water & bullion.
  4. Bring to a boil and then cook for about 20 minutes on medium heat.
